What is babka?
A babka or babka bread is originated in Jewish communities in the early 19th century in eastern Europe. Originally it is a sweet braided bread that is prepared with a rich yeasted dough that is rolled out and spread with a filling such as cinnamon and chocolate. Later other variations are developed such as bread filled with jam, cheese, apples, berries, garlic, and herbs then rolled up into a braided bread before baking.
Savory Vegan Babka
This vegan babka recipe is a savory version and you can easily exchange it with some sweet fillings like chocolate, cinnamon, berries, or other fruits. For this babka recipe, I am using my No-knead Artisan Bread Dough and I am filling it with some garlic, cilantro, and some dried herbs. It’s easy and simple and tastes heaven!
Ingredients
This recipe involved two main steps first is preparing the right dough and than preparing the filling. Ingredients you need are
Dough Ingredients:
- All-Purpose Flour: This is the main ingredient for perfect dough.
- Warm near hot water: The hot water will help the mixing process.
- Dry active yeast: We all love fluffy loaves of babka bread. This dry yeast will help get the ideal form.
- Salt: To taste.
Garlic and Herb Filling Ingredients
- Margarine: As it is a vegan recipe I am using plant based magrarine.
- Garlic chopped: The aroma of garlic will make people crazy for this babka. If you are not a garlic lover you can always half the quantity of garlic.
- Cilantro chopped: You’ll get the light green color and magnificent flavor in vegan babka by adding cilantro.
- Mixed Dried herbs: Beside cilantro add mixed dried herbs for the filling to add more flavor and aroma.
- Tomato Paste: It will help to form a paste-like mixture and adds color to your filling.
- Salt: Because of the abvious savory reason.
How to Make Vegan Babka?
Just follow my four simple steps with the best ingredients and you’ll get the perfect savory baba bread. It’s easy and simple and tastes heaven!
Make The Dough
Begin with a large bowl for dough. Add salt and active dry yeast into lukewarm water. Once they’re dissolved add flour into it and mix everything well with a wooden spoon. After that you have to shape the dough into a ball and leave it covered with plastic wrap for 2-3 hours to rise in a dry place. I like to place a towel on the top to keep it warm. Always check the expiration date on your yeast package otherwise the yeast might be old and the dough won’t rise properly.
Once risen scrape dough out of the bowl, sprinkle the top of the dough with flour, and fold it. To release the bubbles, punch down the dough. Lastly, divide the dough into 2 pieces. This dough would be enough for making two loaves of bread.
Prepare The Filling
Now for the filling, combine margarine, garlic, herbs, cilantro, and tomato paste. Add a pinch of salt too for taste. This filling makes it more delicious than a simple one.
Twist And Shape It
In the third step, roll the dough in a rectangle shape flatbread and spread the garlic and herb mixture evenly by leaving an approx. ½ inch thin edge free. Roll up the dough from the long side having filling inside. In this way, an elongated roll is created. Don’t forget to seal the ends well. Once it is in a tube-like shape, slash from the middle, and twist them around each other making sure the filling side is on top of the bread. place carefully into a loaf bread tin I am using a Silicone loaf pan, It is perfect for baking and makes it so easy to remove the bread from the mold without tearing and sticking.
Bake and Serve
Last and the most awaited step is to bake. So, preheat the oven to 375F. Bake the babka on the middle rack for about 40-45 minutes until it is well golden brown and twice risen. Now, take it out and place it on a wire rack to cool for 10 minutes. Lastly, remove from the mold, slice, and serve.
Want to Serve Magnificently?
Serving is the key to make people want it more. Other than the appearance of the bread what you can do is dunk in soups or serve with curries or serve with some creamy dips for more flavor and fun.
I mostly serve my babka with a sauce. It makes it heavenly delicious especially when I serve with CORIANDER SAUCE or Hummus. These two are my favorites and taste perfect with them.
Another thing I do is to serve this savory babka with another dish. In this way, a combo can be enjoyed in the form of a perfect meal. Moreover, it goes with pretty much everything so it’s suitable for a fancy dinner too.
Storage Tips
- Firstly, if you’re left with the extra dough, put it in the refrigerator. Its time may extend for more than a week, It would still be fluffy. However, I prefer to use it fresh so make pizza rolls out of it the next day.
- Secondly, you can store the baked babka in the freezer using a plastic bag. Simply leave it on the counter for 2 3 hours and reheat in the oven for 5 minutes.
- Babka will stay fresh for about 2-3 days in the refrigerator simply microwave it and it is ready to serve.
Tips and Tricks
- For keeping the babka fluffy I like to leave the dough in the refrigerator for one night, this tip always helps the process.
- If you get annoyed by sticky dough on the work surface then flour the surface beforehand. In this way, the dough can be rolled up more easily afterward without being too sticky.
- Neatness is another tip that can make your babka look elegant on the table. So, always roll the dough in a rectangular shape to get that perfection.
- During my first attempt, I found it hard to it. So, never forget to use a sharp knife to cut the roll lengthways in the middle. This is very important, otherwise, it will not work properly.

VEGAN SAVORY BABKA
Ingredients
Dough Ingredients:
- 4 Cups All-Purpose Flour
- 2 Cups Warm Water
- ½ Tbs Dry Active Yeast
- ½ Tbs Salt
Garlic and Herb Filling
- 3 Tbs Margarine
- 1 Head Garlic chopped
- 2 Tbs Cilantro chopped
- ½ Tbs Mixed Dried Herbs
- 1 Tbs Tomato Paste
- Salt To Taste
Instructions
- Combine salt and active dry yeast in warm water. Add flour gradually and mix well with wooden spoon and hands.
- Cover with plastic wrap and place a towel over the top. Leave in a dry warm place for up to 2 to 3 hours.
- Once risen scrape dough out of the bowl, sprinkle the top of the dough with flour, and fold it. Punch down the dough, it will help to release the air bubbles. Divide dough into 2 pieces.
- This dough will make two babka bread. Roll it out and spread the garlic and herb mixture evenly on the dough surface leaving a ½ inch border uncovered.
- Preheat oven at 375F. Meanwhile, prepare babka filling by mixing all garlic and herb mixture ingredients.
- Roll the dough in a tube-like shape, slash from the middle, and twist it around each other (see the video). Place in a loaf pan and bake let it sit for 15 min in a warm place to rise.
- Bake on 375F for around 40 to 45 min or until babka is golden brown on top.
- Remove from the oven, place on a wire rack, and allow to cool for 10 minutes before slicing and serving.
