    A comforting, wholesome vegan meal perfect for weeknights or lazy weekends. Simple, delicious, and full of fresh flavor. 

    Ingredient Notes 

    Ingredients to make roasted tomato pasta.
    • Tomatoes: Use ripe Roma or cherry tomatoes for a sweeter, deeper flavor. Garlic: Roasted garlic adds mild sweetness. If you prefer a stronger bite, add one or two raw cloves when blending. 
    • Onion: Yellow or white onions both work. For a milder flavor, use shallots. 
    • Italian Seasoning: If you’re out of Italian seasoning, mix oregano, basil, thyme, and rosemary—or just use any one or two you have on hand. 
    • Vegan Cheddar Cheese: Swap with vegan mozzarella or nutritional yeast for a lighter, cheesy flavor. 
    • Vegan Cream: I used oat cream, but cashew or coconut cream works too—each adds a unique flavor and texture. 
    • Pasta: Any shape works, but penne or spaghetti hold the sauce nicely. 
    • Fresh Basil: Fresh basil works best, but if you’re out, use a pinch of dried basil or parsley. 

    How to Make The Roasted Tomato Pasta 

    To make this roasted tomatoes sauce for pasta, follow the step-by-step process.

    1. Cut tomatoes into thin slices, place them with garlic on a roasting tray, and toss with a tablespoon of oil, paprika, salt, and pepper.
    2. Roast at 425°F for 20 min.

    1. Sauté onion in remaining oil until translucent.
    2. Add roasted tomatoes and garlic. Add reserved pasta water and cook for a minute.

    1. Blend the mixture into a smooth, creamy roasted tomato pasta sauce.
    2. Add in the cooked pasta, vegan cheese, cream, Italian seasoning, and chopped basil.

    1. Adjust the Seasoning and mix everything well. If the sauce is too thick, add a splash of reserved pasta water.
    2. Serve warm with extra cheese and basil on top. 

    Serving Tips 

    For a delicious finish, top your pasta with extra vegan cheese and fresh basil. Add a sprinkle of chili flakes or crushed red pepper for a spicy kick, and drizzle a little olive or chili oil for extra richness.

    Pair it with garlic bread or a crisp green salad for a complete meal, and mix in roasted veggies like zucchini, bell peppers, or mushrooms for extra texture. For added protein, try adding grilled tofu, tempeh, or chickpeas.

    Ingredients
      

    • 1 lb. Ripe Tomatoes
    • 6-8 cloves Garlic
    • 1 medium Onion
    • 3 Tbs Extra Virgin Olive oil
    • 1 Tbs Italian Seasoning
    • To taste Salt and Black Pepper
    • 3 Tbs Vegan Cheddar Cheese Shredded
    • ¼ cup Vegan Cream
    • 450 g Pasta
    • 7-8 pcs Fresh Basil Leaves

    Instructions
     

    Roast the tomatoes and garlic

    • Preheat your oven to 425°F (220°C).
    • Slice the tomatoes and toss them with garlic cloves, half of the olive oil, Italian seasoning, salt, and black pepper on a baking tray.
    • Roast for 20–30 minutes until the tomatoes are caramelized and soft. 

    Cook the pasta 

    • Bring a large pot of salted water to a boil. Cook the pasta until al dente according to package directions. 
    • Before draining, save 1 cup of pasta water, then drain the rest. 

    Make the sauce

    • In a large pan, heat the remaining olive oil and sauté the chopped onion until golden. 
    • Add the roasted tomatoes and garlic. Pour in reserved pasta water and let it simmer for a minute.
    • Using an immersion blender, blend everything into a smooth, rich sauce. (If using a regular blender, be careful — it’s hot!) 

    Combine everything 

    • Add the cooked pasta to the sauce, followed by vegan cheddar, vegan cream, Italian seasoning and chopped basil leaves.
    • Mix well until the pasta is coated in the creamy roasted tomato sauce. 
    • Adjust the seasoning and if it’s too thick, add a little more of the pasta water until it’s silky and smooth.

     Garnish and serve

    • Dish it out warm, and top with extra vegan cheese and a sprinkle of fresh basil for that perfect finish.
