- Oil: I am using canola oil; you can use olive or sunflower oil too.
- Garlic Powder: I am using garlic powder but if it is not available you can also use fresh minced garlic.
- Mixed Dried Herbs: I am using a mix of dried Rosemary and Thyme to add some aroma. You can use fresh herbs too.
- Vegan Parmesan: Sprinkle some Vegan Parmesan over your butternut squash before serving and you will love it.

- Cut it into lengthwise slices and then cut into one-and-a-half-inch size cubes. Cut them slightly bigger than the bite-size pieces as they will shrink while cooking.
- Place the Butternut squash cubes in a tray and drizzle some oil, add salt, pepper, garlic powder, and Italian seasoning.
- Mix well and place them into the air fryer basket.
- Cook the butternut squash at180C for about 15 to 20 minutes. Shake the basket halfway for even cooking.
- Garnish it with some vegan parmesan and fresh parsley.
