    These eggless blondies will surely delight vegans and those with egg allergies! Not only is this recipe easy enough for any home cook to master but it also comes together quickly enough that you won’t be stuck in the kitchen for hours either. So, let’s jump right in!

    • Nutrient Rich: Flax seeds are used as an egg substitution for this recipe. They are a great source of protein, fiber, and omega-3 fatty acids.

    Ingredients and Substitutions 

    To make these eggless blondies, you will need the following. Reference the recipe card at the bottom for exact measurements.

    • Flax Meal Egg: To make this flax meal egg you have to mix the flax meal with water and let it sit for 5 minutes to thicken.  
    • Vegan Butter: To get the classic buttery flavor add the melted vegan butter. You can also use coconut oil as a healthy substitute. But I prefer butter as after all, it is a dessert.   
    • Brown Sugar: I always recommend brown sugar in my baking as it gives a more settled and warm flavor.  
    • All-Purpose Flour: Use the finest quality all-purpose flour. To make it gluten-free substitute it with gluten-free flour in a 1:1 ratio.   
    • Baking Powder: DO NOT exceed the given amount otherwise your blondies will be caky, not gooey.    

    Step-by-Step Instructions    

    Preparation

    1. Preheat your oven to 350°F (180°C). Butter and line a 6 X9 or 8 x 8-inch tin with parchment paper. Set it aside.  
    1. Make flax meal egg. For that add 3 Tbs of flax meal with 7 tbsp of water. Set aside to get it settled.  
    1. Next, melt the vegan butter in the microwave for 20-25 seconds. Mix and reheat for 10 seconds if needed.  

    Make the Batter

    1. In a large bowl add melted vegan butter, vanilla essence, flax meal egg, and brown sugar. Mix well with a silicon spatula until it is well combined, and the mixture forms a paste-like consistency.  
    1. Next, sift in all-purpose flour along with the baking powder and salt.  
    1. Mix all ingredients using a spatula until no lumps are remaining. Make sure you do not over-mix.  
    1. Once the batter is evenly combined, fold in vegan white chocolate chunks or buttons.

    Bake, Slice and Serve

    1. Transfer the batter to your lined pan and bake it for around 17 to 20 minutes in preheated oven at 350F.  
    1. Once the top is crispy golden brown, and the middle is just set. Remove them from the oven.  
    1. Let it cool on the cooling rack completely. Slice with a sharp knife.
    2. Serve with some vegan Icecream and drizzle some of our reader's favorite vegan honey or vegan caramel syrup.

    Eggless Blondies Storage

    You can make them in advance and can store them in an airtight container in the fridge for a week. You can also freeze them in a zip lock bag and then in an airtight container or freezer bag.

    Simply thaw them overnight at room temperature. Microwave for a minute to get the same gooey texture and flavor.

    Recipe FAQs    

    Why are my blondies not gooey?  

    You overbaked them. You just have to take them out of the oven when the edge starts turning golden even if they are not well done from the center.   

    Why are my blondies cakey?  

    Either you overbaked them or used too much baking powder.   

    What are the egg-free Substitutes for Baking?  

    Flaxseed Meal  
    Chia Seeds  
    Baking Powder and Oil  
    Aquafaba  
    Banana  
    Applesauce  
    Tofu.  

    How do you tell if a blondie is undercooked?

    Blondies are done when they'll start to pull away from the sides of the pan and the edges will be golden brown. Blondies are undercooked if the edges are still stuck to the pan and the middle is not shiny.

    Make sure melted butter is still warm to slightly hot when mixing in sugar to get that butterscotch flavor in your blondies.  
    Do not ignore the sift in the flour process. Sifted flour is much lighter and airier than unsifted flour and is easier to mix with other ingredients.  
    Do not over-mix the mixture.   
    Blondies are meant to be gooey so to achieve the perfect blondie texture on the inside make sure you bake them for just the right amount of time and don't overbake them.  
    Allow the blondies to completely cool on the cooling rack before slicing them.
