How to make Date Roll
As I love sweets, I had to think of some quick and easy vegan dessert options that would satisfy my sweet tooth at any time. The Date roll you see here features dates, nuts and tea biscuits topped with some more chopped nuts and coconut flakes. This combination must sound interesting so let’s make some!
Prepare The Ingredients
- Start with all the prep work. Wash them and pat dry. Deseed them and crush them in a food processor.
- Chop nuts with a knife. I am using roasted almonds and cashew nuts if you are using raw you can dry roast them in a pan on medium heat. This will make them crispy and easy to chop.
- Cut tea biscuits into small chunks. Do not crush them. Set aside
Cook and Combine
- Once all prep work is done, heat a pan on medium heat and melt the margarine.
- Add crushed dates and cook for about 3 to 4 minutes over medium flame stirring continuously.
- Add the chopped almonds and cashew nuts to this and combine evenly. Cook for 2 more minutes.
- Remove from flame. Add tea biscuit pieces and mix. Do not over-mix them. let it cool for about 15 minutes in the refrigerator.
Note: Do not add the tea biscuits during cooking. they will dissolve into the mixture and get mushy.
Shape and Slice
- Grease your hands and roll the whole date and nut mixture to a cylindrical shape. Wrap it in butter paper or cling wrap and let it cool and firm in the refrigerator for about 2 hours.
- Unwrap the roll and cut it into two pieces. Spread desiccated coconut on the butter paper and roll the prepared dates roll on it.
- Roll the other piece of date roll into chopped pistachio.
- Carefully slice with a sharp knife into the 1-inch thickness and serve.
Other Variations
You can try this date rolls recipe with some other variations. Instead of almonds and cashew nuts, you can use
- Chocolate chips
- Pecan and raisins
- Cranberries and walnuts
- Shredded carrots
- Apple and Cinamon
- Cocoa powder and hazelnuts.
Be mindful of the fact that dates are already sweet, whatever flavors you choose to maintain a balance of sweetness.
How to Serve
Serve these delicious date and nuts roll with black coffee of Turkish coffee. You will love the combination of these two together.
Pop them in lunch boxes for a quick snack at the office or school or snack on them as an energy booster for your pre or post-workout snack.
Storage
- You can store your energy balls in an airtight container at room temperature for 2 to 3 days
- For longer storage refrigerate them for 1 to 2 weeks and make sure they are in an airtight container.
- You can also freeze them and they will last up to 3 months in the freezer. I like using glass storage containers or Stasher Reusable bags for storage. (<<Affiliate Links) for storing energy balls.
