Have you ever tried cooking a butter nut squash in an air fryer? If not, then you are missing out! This is a fantastic way to cook this winter squash. The skin becomes nice and crispy, while the flesh remains soft and tender.
Remove the top and bottom of the butternut squash and cut lengthwise with a sharp knife. Peel the squash with a sharp metal vegetable peeler.
Cut it into lengthwise slices and then cut into one-and-a-half-inch size cubes. Cut them slightly bigger than the bite-size pieces as they will shrink while cooking.
Season
Place the Butternut squash cubes in a tray and drizzle some oil, add salt, garlic powder, Rosmery, and thyme.
Mix well with hands and place them into the air fryer basket.
Air Fry
Cook the butternut squash at 180C for about 15 to 20 minutes. Shake the basket halfway for even cooking.
Garnish it with some vegan parmesan and fresh parsley.

Do not overfill the air fryer basket. You can cook in batches for perfect crispy cook.
